Kalingking (Sweet Potato Fritters) – A Batanes specialty
(Serves 4)
Ingredients
1 kilo sweet potatoes
3/4 cup brown sugar
3 cups rice flour or all-purpose flour
1 cup water
1-1/2 cups corn oil for deep frying
Procedure
Peel sweet potatoes and cut into thin strips.
Add sugar and flour to water and stir well.
Add sweet potatoes to sugar and flour mixture and mix with a wooden spoon until well-coated.
Heat oil in a frying pan.
Scoop about 3 tablespoons of the mixture into a shallow saucer.
Flatten with the back of a spoon and slip into hot oil.
Fry until golden brown
