2 c self-raising flour
1 1/2 c raw sugar
500g pitted dates, (soaked in water until soft for chopping)
1 c walnuts, chopped
1 c almonds, chopped (I used chopped cashew nuts)
6 eggs, slightly beaten
250g butter, melted
1 teaspoon vanilla
1. Preheat oven at 180c.
2. Line a square or rectangular baking pan with a non-stick baking paper.
3. Mix raw sugar to the flour, then add all other ingredients: nuts, eggs, melted butter, vanilla and chopped dates; blend well with a mixing spoon.
4. Pour mixture onto the baking pan and level top with the mixing spoon.
5. Bake for 40 minutes’ if cake is not brown yet, raise temp to 200c and bake for further 3 to 5 minutes or until brown.
