We have received a number of queries what a capsicum is. Well, here is a photo. As they say, a picture is worth a words. Hopefully, everyone would now know what a capsicum is.

Bibingkang Galapong (Nueva Ecija style)

Ingredients

4 pc eggs
1 cup white sugar
1/2 tsp salt
2 cup rice flour
melted margarine
2 tbsp baking powder
grated coconut

For topping: 1/4 c coconut cream (first extraction, no water)
1/4 cup white sugar

Procedure

1. Beat eggs in a mixing bowl and add sugar.
2. Combine salt and flour then add to egg mixture.
3. Add melted margarine and baking powder to the flour mixture and blend well.
4. Pour into banana leaf-lined mold.
5. Bake in a preheated oven at 375 degrees F (or, in a traditional clay oven heated with live coal above and underneath.)
6. Brush top with coconut cream and sugar and bake until golden crust is formed.
7. Serve warm with grated coconut.
